Simple Chicken Potpie Recipe

You will need:
Chicken (roaster, shredded, rotisserie chicken)
Pie crust (1 package or 15 ounce, refrigerated)
Vegetable oil (2 tablespoons)
Onions (2 medium, chopped)
Celery (cut crosswise ¼ inch thick and in small stalks, 3)
Chicken broth (2 cups)
Evaporated milk (1 can or 12 ounce)
Butter (1/3 cup)
All purpose flour (9 tablespoons)
Dried thyme (3/4 teaspoons)
Dry sherry or white wine (1/4 cup)
Ground and salt pepper (to taste)
Fresh parsley (1/4 chopped)
Frozen peas and carrots (1 package or 16 ounce, not thawed)
How to do it:
For this recipe you will need to adjust the oven rack to a center position, and lower, then you will need to heat the oven to 400 degrees, then you can discard the skin and bones then remove the pie dough from it’s box and follow the directions for bringing them to a room temperature. Then you have to heat oil in a Dutch oven over medium high heat, and then add the onions, celery, and sauté until they are just a little tender, this will be in about 5 minutes, and after this you can take them to a large bowl along with the chicken and then set aside. In the mean time you can microwave the chicken broth and milk until they are steamy and finally you can heat the butter over medium heat in the empty pan. When you star cooking the flour it will reach a golden color. Bring to simmer, then continue to simmer until sauce fully thickens, about1 minute. Turn off heat, stir in sherry or wine, and season to taste with salt and pepper. Stir the ingredients and divide them in the pie plates, then you can top each pie with the pie dough and set them on a backing sheet, then you can bake until they turn gold. This will happen after 1 hour.
